I’m easy.
「どちらでも構わないよ、特にこだわりはないよ」
(informal) used to say that you do not have a strong opinion
when somebody has offered you a choice

“I’m easy.”は、“I’m easy to please.”を省略したもので、
直訳すると、「私を満足させるのは簡単だ」という意味になり、
そこから、「私はうるさく注文をつけない」という意味合いで、
「どちらでも構わないよ」「特にこだわりはないよ」「何でもいいよ」
などという意味になります。
“What would you like for dinner?”
「夕食は何がいい？」
“Whatever is fine. I’m easy.”
「何でもいいよ。特にこだわりはないよ」
